Method
- Toss sliced chicken with Cajun seasoning until evenly coated.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add chicken and sear 3–4 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, sauté onion and bell peppers until softened, about 4–5 minutes.
- Stir in garlic, smoked paprika, thyme, and oregano; cook 30 seconds until fragrant.
- Pour in chicken broth, scraping the bottom of the pan, and simmer 2–3 minutes.
- Lower heat and stir in heavy cream and Parmesan until sauce is smooth.
- Return chicken to the skillet and simmer 3–4 minutes until heated through and sauce thickens.
- Season with salt and pepper to taste, garnish with parsley, and serve.
Notes
Serve over rice, pasta, or with crusty bread. Adjust Cajun seasoning for desired spice level.
