Ingredients
  

Pork Chops
  • 4 boneless pork chops 1 inch thick
  • salt and pepper to taste
  • 2 tbsp olive oil
Sauce
  • 2 tbsp butter
  • 1 shallot finely diced
  • 3 cloves garlic minced
  • 0.5 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Alpine cheese grated
  • 1 tsp Dijon mustard
  • 1 tsp fresh thyme

Method
 

  1. Season pork chops with salt and pepper.
  2. Heat olive oil in a skillet and sear pork chops 3 to 4 minutes per side. Remove and set aside.
  3. Melt butter in skillet and sauté shallots and garlic until fragrant.
  4. Deglaze with chicken broth, scraping up browned bits.
  5. Stir in heavy cream and Dijon mustard. Simmer lightly.
  6. Add Alpine cheese gradually until melted and smooth.
  7. Add thyme, return pork chops to skillet, and simmer 3 to 5 minutes.
  8. Serve warm with optional sautéed mushrooms.

Notes

For an extra nutty finish, add a sprinkle of grated Gruyère before serving.
