Method
- Season pork chops with salt and pepper.
- Heat olive oil in a skillet and sear pork chops 3 to 4 minutes per side. Remove and set aside.
- Melt butter in skillet and sauté shallots and garlic until fragrant.
- Deglaze with chicken broth, scraping up browned bits.
- Stir in heavy cream and Dijon mustard. Simmer lightly.
- Add Alpine cheese gradually until melted and smooth.
- Add thyme, return pork chops to skillet, and simmer 3 to 5 minutes.
- Serve warm with optional sautéed mushrooms.
Notes
For an extra nutty finish, add a sprinkle of grated Gruyère before serving.
