Ingredients
  

Cornbread Batter
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.33 cup sugar
  • 1 tsp salt
  • 2 eggs large
  • 0.5 cup unsalted butter melted
  • 1 cup sour cream full-fat
  • 0.5 cup milk

Method
 

  1. Preheat oven to 375°F (190°C) and grease an 8×8 pan or cast-iron skillet.
  2. Whisk cornmeal, flour, baking powder, sugar, and salt together.
  3. In another bowl, mix eggs, melted butter, sour cream, and milk.
  4. Combine wet and dry ingredients, stirring gently until just combined.
  5. Pour batter into the prepared pan.
  6. Bake 25–30 minutes until golden and a toothpick comes out clean.
  7. Cool slightly before slicing and serving warm.

Notes

For a sweeter version, increase sugar to 1/2 cup.
