Ingredients
  

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp ground turmeric
  • 0.25 tsp black pepper
  • 1 medium cauliflower cut into florets
  • 4 cups chicken broth
  • 2 cups cooked chicken breast shredded
  • 1 bay leaf
  • to taste sea salt

  • Large soup pot
  • Cutting board
  • Knife
  • Immersion blender

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté onion until soft.
  2. Add garlic, ginger, turmeric, and black pepper. Stir until fragrant.
  3. Add cauliflower florets and stir to coat.
  4. Pour in chicken broth and add bay leaf. Bring to a boil.
  5. Reduce heat and simmer until cauliflower is tender, about 20 minutes.
  6. Add cooked chicken and simmer 10 minutes.
  7. Remove bay leaf and blend partially with immersion blender.
  8. Season with salt and serve warm.

Notes

Blend more or less depending on preferred texture.
