Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.5 cups milk
  • 2 tbsp butter melted
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Apple Filling
  • 3 apples peeled and sliced
  • 2 tbsp butter
  • 0.25 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice

Equipment

  • Mixing bowls
  • Nonstick skillet
  • Spatula

Method
 

  1. Whisk flour, sugar, and salt in a bowl. Add eggs and mix smooth. Gradually add milk, then butter and vanilla.
  2. Let batter rest 10 minutes.
  3. Cook apples, butter, sugar, cinnamon, and lemon juice in skillet until tender.
  4. Heat lightly greased skillet over medium heat.
  5. Pour 1/4 cup batter and swirl to coat pan thinly.
  6. Cook until edges lift, flip, and cook briefly.
  7. Fill crepes with apple mixture.
  8. Fold, top as desired, and serve warm.

Notes

Resting batter improves texture. Filling can be made ahead.
