- Whisk flour, sugar, and salt in a bowl. Add eggs and mix smooth. Gradually add milk, then butter and vanilla.
- Let batter rest 10 minutes.
- Cook apples, butter, sugar, cinnamon, and lemon juice in skillet until tender.
- Heat lightly greased skillet over medium heat.
- Pour 1/4 cup batter and swirl to coat pan thinly.
- Cook until edges lift, flip, and cook briefly.
- Fill crepes with apple mixture.
- Fold, top as desired, and serve warm.
Notes
Resting batter improves texture. Filling can be made ahead.
