Ingredients
  

  • 3 lbs chicken bone-in pieces
  • 2 tbsp brown sugar
  • 3 tbsp vegetable oil
  • 1 onion sliced
  • 1 bell pepper sliced
  • 2 carrots sliced
  • 3 scallions chopped
  • 4 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 sprigs thyme fresh
  • 1 Scotch bonnet pepper whole
  • 1 cup chicken broth

Equipment

  • Dutch oven or heavy pot
  • Cutting board
  • Knife
  • Wooden spoon

Method
 

  1. Season chicken and marinate for at least 2 hours.
  2. Heat oil and brown sugar until caramelized.
  3. Add chicken and brown thoroughly.
  4. Add vegetables and broth, then simmer until tender.
  5. Adjust seasoning and serve hot.

Notes

Best flavor develops when marinated overnight.
