Method
- Place eggs in saucepan, cover with water, and bring to boil.
- Remove from heat, cover, and let sit 10 minutes.
- Transfer eggs to ice bath and cool completely.
- Peel eggs, slice in half, and remove yolks to bowl.
- Add avocado, mayonnaise, mustard, lime juice, garlic powder, salt, and pepper.
- Mash mixture until smooth and creamy.
- Fill egg whites with mixture using spoon or piping bag.
- Garnish with paprika and herbs. Serve chilled.
Notes
Add extra lime juice to prevent avocado browning. Best served fresh.
