Ingredients
  

Egg Base
  • 6 eggs hard boiled and peeled
Filling
  • 1 ripe avocado
  • 1.5 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lime juice fresh
  • 2 tbsp chives finely chopped
  • 0.25 tsp garlic powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • paprika for garnish

Equipment

  • Saucepan
  • Mixing bowl
  • Knife
  • Spoon or piping bag

Method
 

  1. Place eggs in saucepan, cover with water, and bring to boil.
  2. Remove from heat, cover, and let sit 10 minutes.
  3. Transfer eggs to ice bath and cool completely.
  4. Peel eggs, slice in half, and remove yolks to bowl.
  5. Add avocado, mayonnaise, mustard, lime juice, garlic powder, salt, and pepper.
  6. Mash mixture until smooth and creamy.
  7. Fill egg whites with mixture using spoon or piping bag.
  8. Garnish with paprika and herbs. Serve chilled.

Notes

Add extra lime juice to prevent avocado browning. Best served fresh.
