Ingredients
  

Salad
  • 2 mangoes peeled, pitted, diced
  • 2 avocados peeled, pitted, cubed
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh cilantro chopped
Zesty Lime Dressing
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp lime zest
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey or agave
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper

Method
 

  1. Dice mangoes and avocados into bite-sized pieces. Halve cherry tomatoes and slice red onion thinly.
  2. In a large bowl, gently combine mango, avocado, tomatoes, onion, and cilantro.
  3. In a small bowl, whisk lime juice, lime zest, olive oil, honey, salt, and black pepper until smooth.
  4. Pour dressing over the salad and toss gently to coat all ingredients.
  5. Taste and adjust seasoning if needed. Serve immediately for best freshness.

Notes

Best served fresh. Add grilled chicken or shrimp for a complete meal.
