Ingredients
  

Croquette Mixture
  • 2 cups mashed potatoes cooled
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon crumbled
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • salt and pepper to taste
Coating
  • 0.5 cup all-purpose flour
  • 2 eggs beaten
  • 1.5 cups breadcrumbs

  • Hand mixer or stand mixer

Method
 

  1. Combine mashed potatoes, bacon, cheese, garlic powder, paprika, salt, and pepper in a large bowl.
  2. Shape mixture into small balls or cylinders and chill for 20–30 minutes.
  3. Coat each croquette in flour, then egg, then breadcrumbs.
  4. Heat oil to 350°F (175°C).
  5. Fry croquettes in batches for 3–4 minutes until golden and crisp.
  6. Drain on wire rack or paper towels and serve hot.

Notes

Freeze before frying for easy make-ahead snacks.
