Ingredients
  

Pie Filling
  • 1 unbaked pie crust
  • 4-5 medium tomatoes sliced
  • 1 tsp salt for draining tomatoes
  • 6 slices thick-cut bacon cooked and chopped
  • 1 large yellow onion thinly sliced
  • 1 tbsp butter for sautéing
Cheese Topping
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup mayonnaise
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder

Method
 

  1. Slice tomatoes, salt them, and let drain for 20–30 minutes, then pat dry.
  2. Preheat oven to 375°F (190°C). Pre-bake the pie crust for 8–10 minutes.
  3. Caramelize onions in butter until golden, 10–12 minutes.
  4. Cook bacon until crisp and chop into pieces.
  5. Layer onions, tomatoes, and bacon inside the pie crust.
  6. Mix cheddar, mozzarella, mayonnaise, pepper, and garlic powder.
  7. Spread the cheese mixture on top of the layered pie.
  8. Bake for 30–35 minutes until golden and bubbling.
