Ingredients
  

Meatballs
  • 1 lb ground chicken
  • 0.75 cup ricotta cheese
  • 0.5 cup parmesan cheese grated
  • 0.75 cup breadcrumbs
  • 1 egg large
  • 3 cloves garlic minced
  • 2 tbsp parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp Italian seasoning
Spinach Alfredo Sauce
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup parmesan cheese grated
  • 2 cups spinach chopped
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 pinch nutmeg optional

Equipment

  • Mixing bowls

Method
 

  1. Preheat oven to 400°F and line baking sheet with parchment.
  2. Combine all meatball ingredients in bowl and mix gently.
  3. Form into balls and place on sheet.
  4. Bake 18–22 minutes until cooked through.
  5. Melt butter in skillet and sauté garlic.
  6. Add cream and simmer.
  7. Whisk in parmesan until smooth.
  8. Stir in spinach and seasoning.
  9. Add meatballs and simmer briefly before serving.

Notes

Serve over pasta, vegetables, or rice for a complete meal.
