  • 2 lb baby potatoes halved
  • 1 block feta cheese 7–8 oz
  • 0.25 cup olive oil
  • 4 cloves garlic smashed
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp paprika
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Toss potatoes with olive oil, garlic, herbs, salt, and pepper.
  3. Place feta block in the center of the dish among the potatoes.
  4. Bake uncovered for 40–45 minutes, stirring once halfway.
  5. Mash feta gently and mix with potatoes before serving.

Notes

Finish with fresh parsley and lemon juice for best flavor.
