Baked Feta Potatoes

Crispy roasted potatoes tossed with creamy baked feta and herbs.

Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved
  • 4 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp oregano dried
  • 1 tsp thyme dried
  • 0.75 tsp salt
  • 0.5 tsp black pepper
Feta Topping
  • 8 oz feta cheese block
  • 0.5 tsp chili flakes optional
  • 2 tbsp parsley chopped
  • 0.5 lemon zest optional

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss potatoes with olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Spread potatoes cut-side down on baking sheet.
  4. Roast 30 minutes until golden underneath.
  5. Stir potatoes and place feta block in center of pan.
  6. Sprinkle chili flakes over feta and return to oven.
  7. Bake 15–20 minutes until potatoes are crispy and feta is soft.
  8. Gently mix feta with potatoes and garnish with parsley and lemon zest.

Notes

For extra crispiness, soak cut potatoes in cold water 30 minutes before roasting and dry thoroughly.
