Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss potatoes with olive oil, garlic, oregano, thyme, salt, and pepper.
- Spread potatoes cut-side down on baking sheet.
- Roast 30 minutes until golden underneath.
- Stir potatoes and place feta block in center of pan.
- Sprinkle chili flakes over feta and return to oven.
- Bake 15–20 minutes until potatoes are crispy and feta is soft.
- Gently mix feta with potatoes and garnish with parsley and lemon zest.
Notes
For extra crispiness, soak cut potatoes in cold water 30 minutes before roasting and dry thoroughly.
