Ingredients
  

Gnocchi Base
  • 1 lb shelf-stable potato gnocchi
  • 3 large yellow onions thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp thyme fresh or dried
  • 1 cup beef broth
  • 0.75 cup heavy cream
  • 1 cup Gruyère cheese shredded
  • 1 cup mozzarella cheese shredded
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Melt butter and olive oil in a skillet over medium heat. Add onions and cook slowly until caramelized, about 25 minutes.
  3. Add garlic and thyme, cook 1 minute. Stir in broth and simmer 5 minutes.
  4. Add cream, salt, and pepper. Remove from heat.
  5. Stir gnocchi into the sauce, transfer to baking dish.
  6. Top with Gruyère and mozzarella.
  7. Bake 25–30 minutes until bubbly and golden.
  8. Rest 5 minutes before serving.

Notes

For a vegetarian version, substitute vegetable broth for beef broth.
