Method
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Melt butter and olive oil in a skillet over medium heat. Add onions and cook slowly until caramelized, about 25 minutes.
- Add garlic and thyme, cook 1 minute. Stir in broth and simmer 5 minutes.
- Add cream, salt, and pepper. Remove from heat.
- Stir gnocchi into the sauce, transfer to baking dish.
- Top with Gruyère and mozzarella.
- Bake 25–30 minutes until bubbly and golden.
- Rest 5 minutes before serving.
Notes
For a vegetarian version, substitute vegetable broth for beef broth.
