Method
- Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- Mash the ripe bananas in a large bowl until mostly smooth.
- Whisk in melted butter, sugar, eggs, and vanilla until well combined.
- In a separate bowl, mix flour, baking soda, salt, and cinnamon.
- Gently fold dry ingredients into wet ingredients until just combined.
- Pour batter into loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
Use very ripe bananas for best flavor. Add nuts or chocolate chips for variety.
