Beef and Cheese Chimichangas

Ingredients
  

Chimichanga Filling
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can diced green chiles (4 oz)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp oregano
  • 1 tsp salt or to taste
  • 0.5 cup tomato sauce
  • 1 tbsp tomato paste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
Assembly
  • 6-8 large flour tortillas 10-inch
  • oil for frying

Method
 

  1. Cook ground beef in a skillet until browned, then drain fat.
  2. Add diced onion and cook until softened, then stir in garlic.
  3. Mix in cumin, chili powder, paprika, oregano, salt, tomato sauce, tomato paste, and green chiles. Simmer 5–7 minutes.
  4. Warm tortillas and fill each with beef mixture and cheeses.
  5. Fold tightly into burrito-style rolls to form chimichangas.
  6. Heat oil to 350°F and fry chimichangas seam-side down 2–3 minutes per side until golden and crispy.
  7. Drain on paper towels and serve hot with toppings of choice.

Notes

Customize with beans, rice, or jalapeños. Air-fry or bake for a lighter version.
