Method
- Cook ground beef in a skillet until browned, then drain fat.
- Add diced onion and cook until softened, then stir in garlic.
- Mix in cumin, chili powder, paprika, oregano, salt, tomato sauce, tomato paste, and green chiles. Simmer 5–7 minutes.
- Warm tortillas and fill each with beef mixture and cheeses.
- Fold tightly into burrito-style rolls to form chimichangas.
- Heat oil to 350°F and fry chimichangas seam-side down 2–3 minutes per side until golden and crispy.
- Drain on paper towels and serve hot with toppings of choice.
Notes
Customize with beans, rice, or jalapeños. Air-fry or bake for a lighter version.
