Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion diced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 can diced tomatoes 14.5 oz
  • 4 cups beef broth
  • 2 cups water
  • 1 cup elbow macaroni
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp paprika
  • salt to taste
  • black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in onion, carrots, and celery; cook until softened.
  4. Add garlic and tomato paste; cook until fragrant.
  5. Pour in diced tomatoes, broth, and water; stir to combine.
  6. Season with oregano, basil, paprika, salt, and pepper.
  7. Simmer for 15 minutes, then add macaroni.
  8. Cook until pasta is tender. Serve hot.

Notes

Add extra broth when reheating, as pasta absorbs liquid.
