Ingredients
  

Casserole
  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 2 cups red enchilada sauce
  • 10-12 corn tortillas quartered
  • 2 cups cheddar cheese shredded
  • 1.5 cups Monterey Jack cheese shredded

  • 9x13 baking dish
  • Mixing spoon

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13 baking dish.
  2. Brown ground beef in a skillet, draining excess fat.
  3. Add onion and garlic and cook until softened.
  4. Season with chili powder and cumin, then stir in enchilada sauce.
  5. Layer tortillas, beef mixture, and cheese in the baking dish.
  6. Bake covered for 20 minutes, uncover and bake 15 minutes more.
  7. Rest 10 minutes before serving.
