Ingredients
  

Meatloaf
  • 2 lb ground beef 80/20 blend
  • 1 cup breadcrumbs
  • 0.75 cup milk
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 2 eggs
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp dried parsley
Glaze
  • 0.5 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard

Equipment

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine breadcrumbs and milk in a bowl and let soak for 2–3 minutes.
  3. Add beef, onion, garlic, eggs, Worcestershire sauce, ketchup, mustard, salt, pepper, paprika, and parsley.
  4. Mix gently until just combined.
  5. Shape into a loaf and place on prepared baking sheet.
  6. Whisk glaze ingredients together.
  7. Spread half the glaze over meatloaf.
  8. Bake for 40 minutes.
  9. Spread remaining glaze and bake 15–20 minutes more until internal temperature reaches 160°F.
  10. Rest 10 minutes before slicing and serving.

Notes

For extra flavor sauté onions before mixing. Resting ensures juicy slices.
