Ingredients
  

Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 cup pumpkin puree
  • 0.75 cup vegetable oil
  • 2 eggs large
  • 1 tsp vanilla extract
Frosting
  • 8 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x13-inch pan with parchment paper.
  2. Whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl mix sugars, pumpkin, oil, eggs, and vanilla until smooth.
  4. Fold dry ingredients into wet mixture until just combined.
  5. Spread batter evenly into prepared pan.
  6. Bake 25–30 minutes until a toothpick inserted comes out clean.
  7. Cool completely on wire rack.
  8. Beat frosting ingredients until smooth and fluffy.
  9. Spread frosting over cooled bars, slice, and serve.

Notes

For best texture, do not overbake. Chill before slicing for clean edges.
