Ingredients
  

Quiche Filling
  • 5 large eggs
  • 1.75 cups heavy cream
  • 1 cup Gruyère cheese grated
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp nutmeg
  • 1 tbsp fresh chives chopped
  • fresh thyme to taste
Crust
  • 1 pie crust homemade or store-bought

Method
 

  1. Preheat oven to 375°F (190°C). Prepare a pie pan with a rolled pie crust.
  2. Line the crust with parchment and add pie weights. Blind bake for 12 minutes, remove weights, and bake 5–7 minutes more.
  3. Whisk eggs, cream, salt, pepper, and nutmeg until combined.
  4. Spread cheese and herbs in the crust. Pour custard over filling.
  5. Bake 35–45 minutes until the center is just set and lightly golden.
  6. Cool 20 minutes before slicing and serving.
