- Preheat oven to 425°F (220°C).
- Wash, dry, and cut potatoes into even pieces.
- Toss potatoes and garlic with olive oil, salt, pepper, and herbs.
- Spread evenly on a baking sheet, cut side down.
- Roast for 25 minutes, flip, then roast 20–25 minutes more until golden.
- Garnish with parsley and serve hot.
Notes
