Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved or quartered
  • 2 bulbs garlic cloves separated
  • 3 tbsp olive oil
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 0.5 tsp smoked paprika optional

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Wash, dry, and cut potatoes into even pieces.
  3. Toss potatoes and garlic with olive oil, salt, pepper, and herbs.
  4. Spread evenly on a baking sheet, cut side down.
  5. Roast for 25 minutes, flip, then roast 20–25 minutes more until golden.
  6. Garnish with parsley and serve hot.

Notes

For extra crispiness, avoid overcrowding the pan and roast at high heat.
