Ingredients
  

Salad Base
  • 4 cups baby spinach or mixed greens
  • 1 cup fresh blackberries
  • 2 avocados ripe, sliced
  • 1 cup cooked quinoa cooled
  • 0.25 cup feta cheese crumbled
  • 0.25 cup walnuts chopped
  • 1 tbsp chia seeds
Lemon-Honey Vinaigrette
  • 2 tbsp lemon juice freshly squeezed
  • 3 tbsp olive oil extra-virgin
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard optional
  • 0.25 tsp salt to taste
  • 0.25 tsp black pepper to taste

Equipment

Method
 

  1. Add baby spinach or mixed greens to a large salad bowl and fluff gently.
  2. Scatter fresh blackberries and cooked quinoa evenly over the greens.
  3. Slice avocados and arrange on top of the salad.
  4. Sprinkle with crumbled feta, chopped walnuts, and chia seeds.
  5. In a small bowl or jar, whisk together lemon juice, olive oil, honey, Dijon (if using), salt, and pepper until emulsified.
  6. Drizzle dressing over the salad just before serving.
  7. Toss gently to combine and serve immediately.

Notes

For best flavor and texture, add the dressing just before serving and use ripe but firm avocados.
