Ingredients
  

Salad
  • 4 cups mixed greens
  • 2 peaches sliced
  • 1 cup blueberries
  • 0.5 cup feta cheese crumbled
  • 0.25 cup almonds or pecans chopped
  • 2 tbsp fresh herbs mint or basil
Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • salt to taste
  • black pepper to taste

Equipment

  • Mixing bowl
  • Salad bowl
  • Knife
  • Cutting board
  • Small whisk

Method
 

  1. Wash and dry blueberries and greens.
  2. Slice peaches into thin wedges.
  3. Whisk olive oil, lemon juice, honey, mustard, salt, and pepper.
  4. Place greens in a large bowl.
  5. Add peaches, blueberries, feta, and nuts.
  6. Drizzle dressing over salad.
  7. Toss gently to combine.
  8. Garnish with herbs and serve immediately.

Notes

Use ripe peaches and add dressing just before serving for best texture.
