Method
- Preheat oven to 375°F and line muffin tin.
- Make streusel by mixing topping ingredients and cutting in butter until crumbly. Chill.
- Whisk dry batter ingredients in a bowl.
- Mix wet ingredients separately until smooth.
- Fold wet mixture into dry ingredients gently.
- Fold in blueberries lightly.
- Fill muffin cups ¾ full.
- Top with streusel.
- Bake 20–25 minutes until golden.
- Cool slightly before serving.
Notes
Do not overmix batter. Toss berries in flour before adding to prevent sinking.
