Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup milk
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 2 tsp vanilla extract
  • 1.5 cups blueberries
Streusel Topping
  • 0.5 cup all-purpose flour
  • 0.33 cup brown sugar
  • 0.25 cup unsalted butter cold cubed
  • 0.5 tsp cinnamon
  • 1 pinch salt

Method
 

  1. Preheat oven to 375°F and line muffin tin.
  2. Make streusel by mixing topping ingredients and cutting in butter until crumbly. Chill.
  3. Whisk dry batter ingredients in a bowl.
  4. Mix wet ingredients separately until smooth.
  5. Fold wet mixture into dry ingredients gently.
  6. Fold in blueberries lightly.
  7. Fill muffin cups ¾ full.
  8. Top with streusel.
  9. Bake 20–25 minutes until golden.
  10. Cool slightly before serving.

Notes

Do not overmix batter. Toss berries in flour before adding to prevent sinking.
