Method
- Cook blueberries with honey in a saucepan over medium heat until softened and juicy, about 5 minutes. Mash lightly and cool.
- In a bowl, mix yogurt, sweetener, vanilla, lemon zest, and salt until smooth.
- Spoon yogurt mixture into molds or onto parchment in small rounds.
- Add a small spoonful of blueberry mixture on top of each.
- Use a toothpick to swirl gently for a marbled effect.
- Freeze for 2–3 hours until completely solid.
- Remove from molds and store in airtight container in freezer.
Notes
Use full-fat yogurt for creamiest texture. Adjust sweetness before freezing.
