Ingredients
  

Pasta Base
  • 16 oz elbow macaroni
  • 2 cups cooked brisket chopped or shredded
Cheese Sauce
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese shredded
  • 1 cup smoked gouda cheese shredded

Method
 

  1. Cook macaroni in salted boiling water until al dente. Drain and set aside.
  2. Melt butter in a saucepan over medium heat. Whisk in flour and cook briefly.
  3. Slowly whisk in milk and cream, cooking until thickened.
  4. Reduce heat and stir in cheeses until smooth.
  5. Season cheese sauce and fold in macaroni and brisket.
  6. Transfer to baking dish, top with breadcrumbs if desired, and bake until bubbly.

Notes

Use smoked brisket for best flavor and shred cheese fresh for smooth sauce.
