Ingredients
  

Salad
  • 4 cups broccoli florets chopped small
  • 2 apples diced
  • 0.5 cup shredded carrots
  • 0.5 cup dried cranberries
  • 0.5 cup pecans or walnuts toasted and chopped
  • 0.25 cup red onion diced
Dressing
  • 0.5 cup mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 0.5 tbsp lemon juice
  • salt to taste
  • black pepper to taste

Method
 

  1. Chop broccoli into small bite-sized pieces and place in a large bowl.
  2. Dice apples and add them to the bowl along with carrots, cranberries, nuts, and onion.
  3. Whisk mayonnaise, Greek yogurt, honey, apple cider vinegar, lemon juice, salt, and pepper together.
  4. Pour dressing over the salad and toss gently to coat.
  5. Refrigerate for 30 minutes before serving for best flavor.

Notes

For a lighter version, replace mayonnaise with Greek yogurt.
