Ingredients
  

Cookie Batter
  • 4 cups cooked navy beans or two 15 oz cans
  • 6 slices thick-cut bacon chopped
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 1 cup tomato sauce
  • 0.5 cup brown sugar packed
  • 3 tbsp molasses optional
  • 2 tbsp mustard yellow or Dijon
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.5 cup water or broth

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook bacon in a skillet until crisp; set aside half for topping.
  3. Sauté onion in remaining bacon fat until soft, then add garlic.
  4. Stir in tomato sauce, brown sugar, molasses, mustard, Worcestershire sauce, paprika, salt, and pepper.
  5. Add beans and water, mixing gently.
  6. Transfer mixture to baking dish and bake uncovered for 1 hour.
  7. Top with remaining bacon during last 10 minutes of baking.
  8. Let rest before serving.

Notes

Adjust sweetness by adding more or less brown sugar.
