Ingredients
  

Boba Pearls
  • 0.5 cup black tapioca pearls
  • 4 cups water
  • 0.5 cup brown sugar
  • 0.25 cup water for syrup
Chia Pudding
  • 0.5 cup chia seeds
  • 2 cups milk
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 pinch salt
Assembly
  • 0.5 cup heavy cream optional
  • 2 tbsp brown sugar syrup for drizzle

Method
 

  1. Bring water to a boil and cook tapioca pearls according to package instructions.
  2. Let pearls rest covered 10 minutes, then drain.
  3. Simmer brown sugar and water until syrup forms, then coat pearls.
  4. Whisk milk, maple syrup, vanilla, and salt.
  5. Stir in chia seeds and whisk again after 5 minutes.
  6. Refrigerate pudding at least 2 hours until thick.
  7. Layer pudding and boba in glasses.
  8. Top with whipped cream and syrup, then serve.

Notes

Best served fresh while pearls are soft.
