Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.25 cup powdered sugar
  • 1 egg large
  • 1.5 tsp vanilla extract
  • 1 cup pistachios shelled and finely chopped

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Beat butter until creamy, then add sugars and mix until light and fluffy.
  4. Add egg and vanilla extract, mixing until fully incorporated.
  5. Gradually mix in dry ingredients until just combined.
  6. Fold in chopped pistachios gently.
  7. Scoop dough onto baking sheets and flatten slightly.
  8. Bake 12–14 minutes until edges are lightly golden. Cool on wire racks.

Toast pistachios lightly for deeper flavor and aroma.
