Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.33 cup granulated sugar
  • 0.5 cup unsalted butter melted
Custard Filling
  • 2.5 cups whole milk
  • 0.66 cup granulated sugar
  • 0.25 cup cornstarch
  • 0.25 tsp salt
  • 4 egg yolks
  • 2 tbsp unsalted butter
  • 2 tsp vanilla extract
Meringue
  • 4 egg whites
  • 0.5 cup granulated sugar
  • 0.25 tsp cream of tartar
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into pie dish and bake 10 minutes.
  3. Whisk sugar, cornstarch, salt, and milk in saucepan. Cook until thickened.
  4. Temper egg yolks, return to heat, and cook until smooth. Stir in butter and vanilla.
  5. Pour custard into crust.
  6. Beat egg whites with cream of tartar, add sugar gradually, beat until stiff peaks.
  7. Spread meringue over hot custard and bake until golden.
  8. Cool completely and refrigerate before serving.

Notes

Always spread meringue over hot custard to prevent weeping.
