Method
- Preheat oven to 400°F (200°C).
- Heat olive oil and butter in skillet over medium-low heat. Add onions and salt and cook 30–40 minutes until caramelized.
- Stir in pepper and thyme and let cool slightly.
- Roll out puff pastry and score border.
- Whisk goat cheese, cream, egg, and Parmesan until smooth.
- Spread cheese mixture on pastry and top with onions.
- Bake 20–25 minutes until golden and puffed.
- Cool slightly, slice, and serve.
Notes
For extra flavor, drizzle with balsamic glaze before serving.
