Ingredients
  

Pastry
  • 1 sheet puff pastry thawed
Onion Filling
  • 3 yellow onions thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp fresh thyme
Cheese Filling
  • 4 oz goat cheese softened
  • 0.25 cup heavy cream
  • 1 egg
  • 0.25 cup Parmesan cheese grated

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil and butter in skillet over medium-low heat. Add onions and salt and cook 30–40 minutes until caramelized.
  3. Stir in pepper and thyme and let cool slightly.
  4. Roll out puff pastry and score border.
  5. Whisk goat cheese, cream, egg, and Parmesan until smooth.
  6. Spread cheese mixture on pastry and top with onions.
  7. Bake 20–25 minutes until golden and puffed.
  8. Cool slightly, slice, and serve.

Notes

For extra flavor, drizzle with balsamic glaze before serving.
