Ingredients
  

Salad
  • 2 cups grated carrots
  • 1 large apple julienned or grated
  • 2 tbsp lemon juice
  • 1 tbsp honey or maple syrup
  • 2 tbsp raisins or dried cranberries
  • 2 tbsp chopped nuts optional
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 pinch cinnamon optional

Equipment

  • Mixing bowl
  • Grater
  • Knife
  • Cutting board

Method
 

  1. Grate carrots and place in a mixing bowl.
  2. Julienne or grate apple and add to bowl.
  3. Pour lemon juice over fruit and vegetables.
  4. Add honey or maple syrup and olive oil.
  5. Sprinkle in salt and optional cinnamon.
  6. Mix thoroughly until evenly coated.
  7. Fold in raisins and nuts.
  8. Serve immediately or chill briefly before serving.

Notes

For best texture, add nuts just before serving and use crisp apples.
