- Grate carrots and place in a mixing bowl.
- Julienne or grate apple and add to bowl.
- Pour lemon juice over fruit and vegetables.
- Add honey or maple syrup and olive oil.
- Sprinkle in salt and optional cinnamon.
- Mix thoroughly until evenly coated.
- Fold in raisins and nuts.
- Serve immediately or chill briefly before serving.
Notes
For best texture, add nuts just before serving and use crisp apples.
