Salad
  • 3 carrots peeled
  • 2 cucumbers
Dressing
  • 2 tbsp rice vinegar
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds
  • 2 tbsp fresh herbs chopped

Method
 

  1. Peel carrots and slice lengthwise into thin ribbons using a vegetable peeler.
  2. Slice cucumbers into ribbons the same way, avoiding the seedy center.
  3. Place vegetable ribbons into a large bowl.
  4. In a small bowl, whisk vinegar, olive oil, honey, salt, pepper, and sesame oil.
  5. Pour dressing over vegetables and toss gently.
  6. Sprinkle sesame seeds and herbs on top.
  7. Let rest 5 minutes before serving for best flavor.
