  • 2 lbs ground beef 80/20
  • 1 cup cheddar cheese cubes
  • 1 lb bacon regular cut
  • 0.5 cup BBQ sauce plus extra for brushing
  • 1 egg
  • 0.5 cup breadcrumbs
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F (205°C).
  2. Combine ground beef, egg, breadcrumbs, onion powder, garlic powder, paprika, salt, and pepper.
  3. Form meatballs around cheddar cheese cubes, sealing completely.
  4. Wrap each meatball with bacon and secure if needed.
  5. Brush with BBQ sauce and place on a wire rack.
  6. Bake 25–30 minutes, brushing with additional sauce halfway through.
  7. Optional broil for 1–2 minutes for caramelization.
  8. Rest 5 minutes and serve warm.

Notes

For extra-oozy cheese, freeze cheddar cubes 10 minutes before stuffing.
