- Cook pasta in salted boiling water until al dente, adding broccoli during the last 2–3 minutes. Drain and set aside.
- Heat olive oil and butter in a skillet over medium heat. Add garlic and sauté until fragrant.
- Whisk in flour and cook for 1–2 minutes to form a roux.
- Gradually whisk in milk and cream until the sauce thickens.
- Reduce heat and stir in cheeses until smooth and melted.
- Season with salt and pepper, then add pasta and broccoli, tossing to coat.
Notes
For extra creaminess, reserve a bit of pasta water to loosen the sauce if needed.
