Ingredients
  

  • 12 oz pasta
  • 3 cups broccoli florets
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 0.5 cup heavy cream
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated
  • salt to taste
  • black pepper to taste

  • Skillet or saucepan

Method
 

  1. Cook pasta in salted boiling water until al dente, adding broccoli during the last 2–3 minutes. Drain and set aside.
  2. Heat olive oil and butter in a skillet over medium heat. Add garlic and sauté until fragrant.
  3. Whisk in flour and cook for 1–2 minutes to form a roux.
  4. Gradually whisk in milk and cream until the sauce thickens.
  5. Reduce heat and stir in cheeses until smooth and melted.
  6. Season with salt and pepper, then add pasta and broccoli, tossing to coat.

Notes

For extra creaminess, reserve a bit of pasta water to loosen the sauce if needed.
