  • 2 cups cooked chicken breast diced or shredded
  • 1 cup uncooked white rice
  • 2 cups broccoli florets
  • 2 tbsp butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups cheddar cheese shredded, divided
  • 0.5 cup mozzarella cheese shredded
  • 0.5 cup sour cream

Method
 

  1. Preheat oven to 375°F and grease a 9x13-inch baking dish.
  2. Cook rice according to package instructions and set aside.
  3. Steam broccoli until tender-crisp.
  4. Sauté onion in butter, add garlic, then stir in flour to form a roux.
  5. Whisk in broth and milk, cooking until thickened.
  6. Stir in cheeses and sour cream until smooth.
  7. Combine rice, chicken, broccoli, and sauce. Transfer to baking dish.
  8. Top with remaining cheese and bake 25–30 minutes until bubbly.

Notes

Use rotisserie chicken for faster prep. Can be assembled ahead and refrigerated.
