Method
- Preheat oven to 375°F (190°C). Grease a casserole dish.
- Sauté onion in olive oil until softened, then add garlic.
- Brown the ground beef, breaking it apart as it cooks.
- Season with paprika, onion powder, garlic powder, thyme, chili powder, salt, and pepper.
- Stir in uncooked rice and toast for 1 minute.
- Add diced tomatoes and beef broth. Bring to a low simmer for 3–4 minutes.
- Add heavy cream and stir in shredded cheddar cheese.
- Transfer mixture to casserole dish and top with additional cheese.
- Bake for 25–30 minutes until bubbly and golden brown.
- Let rest 5 minutes before serving. Garnish with parsley.
Notes
For extra creaminess, add 1/4 cup more heavy cream before baking.
