Ingredients
  

Onion Rings
  • 3 large sweet onions cut into thick rings
  • 6 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 2 jalapeños finely diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
Breading
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup buttermilk
  • 2 cups panko breadcrumbs
  • 1 cup breadcrumbs
  • vegetable oil for frying

Equipment

  • Mixing bowls
  • Deep frying pot
  • Wire rack
  • Tongs

Method
 

  1. Slice onions into thick rings and separate layers.
  2. Mix cream cheese, cheddar, jalapeños, and seasonings until smooth.
  3. Place smaller ring inside larger ring and fill gap with cheese mixture.
  4. Freeze stuffed rings 30–45 minutes.
  5. Prepare flour, egg mixture, and breadcrumb bowls.
  6. Coat rings in flour, egg, then breadcrumbs. Repeat egg and crumbs.
  7. Heat oil to 350°F (175°C).
  8. Fry rings 2–3 minutes per side until golden.
  9. Drain on rack and serve hot.

Notes

Freeze before frying to keep cheese from leaking.
