Cheesy Mac and Cheese Meatloaf

A hearty meatloaf stuffed with creamy mac and cheese and topped with a sweet tangy glaze.

Ingredients
  

Meatloaf Base
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 onion finely diced
  • 2 eggs
  • 0.5 cup milk
  • 0.5 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
Mac and Cheese Filling
  • 2 cups cooked elbow macaroni
  • 2 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese
  • 0.5 cup heavy cream
  • 1 tbsp butter
  • 0.5 tsp paprika
Glaze
  • 0.5 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

Equipment

  • Mixing bowls
  • Loaf pan or baking sheet
  • Saucepan
  • Wooden spoon

Method
 

  1. Preheat oven to 375°F (190°C) and prepare a baking pan.
  2. Melt butter in saucepan, add cream and cheeses until smooth, then stir in macaroni and paprika.
  3. Combine all meatloaf ingredients in bowl and mix gently.
  4. Press half meat mixture into loaf shape with a center well.
  5. Fill center with mac and cheese mixture.
  6. Top with remaining meat mixture and seal edges.
  7. Mix glaze ingredients and spread over loaf.
  8. Bake 55–65 minutes until cooked through.
  9. Rest 10 minutes before slicing and serving.

Notes

You can substitute ground turkey or add bacon to the filling for extra flavor.
