- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Spread pizza sauce evenly over tortillas, leaving a small border.
- Sprinkle mozzarella cheese and pepperoni slices evenly on top.
- Season with Italian seasoning, garlic powder, and optional red pepper flakes.
- Roll tortillas tightly into logs.
- Slice each log into 1-inch rounds.
- Place rolls cut-side up on baking sheet.
- Brush tops lightly with olive oil and sprinkle Parmesan.
- Bake 10–12 minutes until golden and cheese is melted.
- Cool slightly before serving with dipping sauce.
Notes
Do not overfill tortillas or rolls may open while baking. For extra crispiness, broil for 1–2 minutes at the end.
