- Heat olive oil and butter in a large skillet over medium heat.
- Add sliced smoked sausage and cook until lightly browned. Remove and set aside.
- Add diced potatoes to the skillet and cook, stirring occasionally, until golden and tender.
- Stir in onion and garlic and cook until fragrant.
- Season with paprika, black pepper, and salt. Mix well.
- Return sausage to the skillet and combine with potatoes.
- Sprinkle cheeses over the top, cover, and allow to melt.
- Garnish with parsley and serve hot.
Notes
For extra flavor, try adding bell peppers or a dash of hot sauce before serving.
