Ingredients
  

Meatloaf Base
  • 1.5 lb ground beef
  • 1 cup breadcrumbs
  • 2 eggs large
  • 0.75 cup milk
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 tbsp ketchup
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
Cheese Filling
  • 1.5 cups shredded mozzarella
  • 0.5 cup shredded cheddar
Onion Glaze
  • 2 tbsp butter
  • 1 onion thinly sliced
  • 2 tbsp brown sugar
  • 0.25 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp balsamic vinegar

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet or grease a loaf pan.
  2. Prepare onion glaze by cooking sliced onions in butter until caramelized. Add brown sugar, ketchup, Worcestershire, and balsamic. Simmer and set aside.
  3. In a large bowl, combine all meatloaf base ingredients until just mixed.
  4. Spread half of the meat mixture into a loaf shape. Add cheese filling down the center.
  5. Cover with remaining meat mixture, sealing edges.
  6. Top with onion glaze and bake 50–60 minutes until internal temperature reaches 160°F (71°C).
  7. Rest 10 minutes before slicing and serving.

Notes

Ensure the cheese is fully sealed inside to prevent leaking during baking.
