- Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil and seasoning, then roast until tender.
- Grease a baking dish and layer half the bread, sweet potatoes, and cheeses.
- Repeat layers with remaining ingredients.
- Whisk eggs, milk, and cream, then pour over the casserole.
- Chill for at least 1 hour or overnight.
- Bake at 350°F (175°C) for 45–55 minutes until set.
- Prepare sauce by making a roux with butter and flour, whisking in milk, and adding cheese until smooth.
- Serve strata warm with sauce drizzled on top.
Notes
Let casserole rest before slicing for best texture. Can be assembled the night before baking.
