  • 4 cups day-old crusty bread, cubed
  • 2 sweet potatoes, sliced medium
  • 1 tbsp olive oil
  • 6 eggs large
  • 2 cups whole milk
  • 0.5 cup heavy cream
  • 1.5 cups cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 0.25 cup Parmesan cheese, grated
Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk
  • 0.5 cup shredded cheese

Method
 

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil and seasoning, then roast until tender.
  2. Grease a baking dish and layer half the bread, sweet potatoes, and cheeses.
  3. Repeat layers with remaining ingredients.
  4. Whisk eggs, milk, and cream, then pour over the casserole.
  5. Chill for at least 1 hour or overnight.
  6. Bake at 350°F (175°C) for 45–55 minutes until set.
  7. Prepare sauce by making a roux with butter and flour, whisking in milk, and adding cheese until smooth.
  8. Serve strata warm with sauce drizzled on top.

Notes

Let casserole rest before slicing for best texture. Can be assembled the night before baking.
