  • 4 cups diced potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 0.33 cup water
  • 1.5 cups shredded cheddar cheese
  • 0.33 cup green onions chopped
  • sour cream for serving

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  2. Toss diced potatoes with oil, salt, and pepper.
  3. Roast potatoes for 25–30 minutes, flipping halfway.
  4. Brown ground beef in a skillet.
  5. Add taco seasoning and water; simmer 2–3 minutes.
  6. Combine potatoes and beef in an oven-safe dish.
  7. Top with cheddar cheese and bake until melted.
  8. Garnish with green onions and serve with sour cream.

Notes

Customize with beans, corn, jalapeños, or salsa for added flavor.
