Cherry Cheesecake Brownies with Fresh Cherries

Ingredients
  

Brownie Base
  • 1 cup unsalted butter melted
  • 1.5 cups granulated sugar
  • 0.75 cup brown sugar
  • 4 eggs large
  • 1 tbsp vanilla extract
  • 1 cup cocoa powder
  • 1 cup all-purpose flour
  • 0.5 tsp salt
Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
Fresh Cherry Topping
  • 2 cups fresh cherries pitted and halved
  • 0.25 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  2. In a saucepan, cook cherries, sugar, and lemon juice until juicy. Add cornstarch slurry and cook until thickened. Cool.
  3. Whisk melted butter with granulated sugar and brown sugar. Add eggs and vanilla.
  4. Stir in cocoa powder, flour, and salt until smooth. Spread most of the batter into the baking pan.
  5. Beat cream cheese with sugar, egg, and vanilla until smooth. Spread over brownie batter.
  6. Dollop remaining brownie batter and swirl gently with a knife.
  7. Spoon cooled cherry topping over the surface and lightly swirl.
  8. Bake 40–45 minutes or until the center is set. Cool completely before cutting.

Notes

For clean slices, chill for at least 2 hours before cutting.
