Method
- Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
- In a saucepan, cook cherries, sugar, and lemon juice until juicy. Add cornstarch slurry and cook until thickened. Cool.
- Whisk melted butter with granulated sugar and brown sugar. Add eggs and vanilla.
- Stir in cocoa powder, flour, and salt until smooth. Spread most of the batter into the baking pan.
- Beat cream cheese with sugar, egg, and vanilla until smooth. Spread over brownie batter.
- Dollop remaining brownie batter and swirl gently with a knife.
- Spoon cooled cherry topping over the surface and lightly swirl.
- Bake 40–45 minutes or until the center is set. Cool completely before cutting.
Notes
For clean slices, chill for at least 2 hours before cutting.
