Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Beat peanut butter, butter, granulated sugar, and brown sugar until creamy.
- Mix in egg and vanilla extract until fully combined.
- Whisk flour, baking soda, and salt in a separate bowl. Gradually add to peanut butter mixture until dough forms.
- Scoop dough into balls and place on baking sheets, flatten slightly.
- Bake 10–12 minutes until edges are lightly golden. Cool on wire racks.
- Melt caramel bits with heavy cream over low heat, stirring until smooth.
- Sandwich cookies with caramel and sprinkle with flaky sea salt.
Notes
For extra gooey caramel, slightly underbake the cookies.
