Ingredients
  

Cookies
  • 1 cup creamy peanut butter
  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
Caramel Filling
  • 0.5 cup caramel bits or squares
  • 2 tbsp heavy cream
  • flaky sea salt for topping

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Beat peanut butter, butter, granulated sugar, and brown sugar until creamy.
  3. Mix in egg and vanilla extract until fully combined.
  4. Whisk flour, baking soda, and salt in a separate bowl. Gradually add to peanut butter mixture until dough forms.
  5. Scoop dough into balls and place on baking sheets, flatten slightly.
  6. Bake 10–12 minutes until edges are lightly golden. Cool on wire racks.
  7. Melt caramel bits with heavy cream over low heat, stirring until smooth.
  8. Sandwich cookies with caramel and sprinkle with flaky sea salt.

Notes

For extra gooey caramel, slightly underbake the cookies.
