Ingredients
  

Casserole Base
  • 2 cups cooked chicken diced or shredded
  • 2 cups cooked rice
  • 2 cups broccoli florets lightly steamed
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup milk
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 1 onion small, chopped
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp dried thyme

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Lightly steam broccoli until just tender and set aside.
  3. Melt butter in a skillet, sauté onion until soft, then add garlic.
  4. Stir in cream of chicken soup, milk, salt, pepper, paprika, and thyme until smooth.
  5. In a large bowl, combine chicken, rice, broccoli, cheddar, and Parmesan cheese.
  6. Pour in sauce mixture and stir until evenly combined.
  7. Transfer to baking dish and spread evenly.
  8. Bake uncovered for 30–35 minutes until bubbly and golden.
  9. Rest for 5–10 minutes before serving.

Notes

For extra flavor, add a pinch of red pepper flakes or substitute brown rice for a healthier version.
