- Preheat oven to 375°F (190°C) and grease a baking dish.
- Lightly steam broccoli until just tender and set aside.
- Melt butter in a skillet, sauté onion until soft, then add garlic.
- Stir in cream of chicken soup, milk, salt, pepper, paprika, and thyme until smooth.
- In a large bowl, combine chicken, rice, broccoli, cheddar, and Parmesan cheese.
- Pour in sauce mixture and stir until evenly combined.
- Transfer to baking dish and spread evenly.
- Bake uncovered for 30–35 minutes until bubbly and golden.
- Rest for 5–10 minutes before serving.
Notes
For extra flavor, add a pinch of red pepper flakes or substitute brown rice for a healthier version.
