Chicken Meatloaf
  • 1.5 lbs ground chicken
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 cup breadcrumbs
  • 0.5 cup Parmesan cheese grated
  • 2 eggs large
  • 1 tsp Dijon mustard
  • 4 slices deli ham
  • 4 slices Swiss cheese
  • 2 tbsp olive oil
  • 0.5 cup milk
  • 0.5 cup ketchup
  • 1 tbsp honey
  • 1 tsp smoked paprika optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, pepper, Dijon mustard, and milk. Mix gently.
  3. Shape half of the chicken mixture into a rectangle on parchment paper.
  4. Layer ham slices and Swiss cheese on top of the chicken base.
  5. Cover filling with remaining chicken mixture, pressing edges to seal.
  6. Mix ketchup, honey, and smoked paprika. Brush glaze over meatloaf.
  7. Bake 50–60 minutes until internal temperature reaches 165°F (74°C).
  8. Let rest 10 minutes before slicing. Garnish with parsley.

Make-ahead tip: Assemble the meatloaf a day prior and refrigerate until baking.
